FRANCESCA RUFFALDI

Founder/Cheesemaker at Caseificio Murceti Castell’Azzara

Francesca is the co-manager of the production at Caseificio Murceti.She graduated in Hispano American and English Literature at University of Florence in 2008 before returning to her family's farm in a very wild area of Toscana, here she established the S.S.A Murceti along with her brother and her husband. Her father is the sheperd poet Sinibaldo Ruffaldi.

The basic idea of the project  is to try combine old traditional methods of cheese-making with modern technology. Every cheese is unique: it depends on the season, on the erbs, and the climate of the day...

Since 2006 she gas collaborated with Potentino on project, Modern Transhumance, which connects tourists with the history of local sheperds.
