Wild Atlantic Seaweed and Smoked Mackerel Salad

“This salad is a mix of our favourite seaweeds which are harvested in the pristine waters just off the northwestern Irish coast. The mackerel is caught in the very same waters and smoked locally. The salad is made using an Asian dressing of ginger, soy and honey embracing the many cultures which now populate the local area, but that more importantly make everything taste fresh and delicious.”

INGREDIENTS

  • Collection of (local of possible) seaweeds. We use: nori, dillisk, very young sea spagetti and alaria

  • Ginger

  • Garlic

  • Lime juice

  • Honey

  • Soy sauce

  • Smoked mackerel

METHOD

To make the dressing, finely chop ginger and garlic (to taste) with lime juice, honey and soy sauce. If you are using dried seaweeds add water to re-hydrate them and marinade in the dressing for at least an hour.

Serve with flaked smoked mackerel drizzled with a little of the dressing.
